Queso Fundido

Queso Fundido

In case you haven’t already heard (and I’m sure you have because I tell EVERYONE!) I am a quarter Mexican. Irish, too but let’s be real, Irish Soda Bread is not as delicious as a big, melty bowl of cheese with a side of crispy

One-Pan Spring Pasta

When a dish like this comes together, all is right in the world. And in our bank account because ALL of the ingredients came from items we already had in our pantry and refrigerator #ThanksCoronavirus. Seriously though, it tasted rich and decadent, especially for being

Greek Turkey Meatballs

Greek Turkey Meatballs

The first time I made this recipe, I shaped the meat mixture into patties for giant, juicy burgers that we topped with avocado, tomato slices, butter lettuce and lots of tzatziki. Then, I remembered I had kids… and that they like to DIP ALL THE THINGS – so meatballs made sense. Now, this recipe is a go-to for dinners EVERYONE enjoys.

The Ingredients List:

  • 1 lb ground turkey
  • 1 egg
  • 1/2 small onion
  • 2 cups fresh spinach
  • 1/4 cup seasoned breadcrumbs
  • 1 tsp dried dill
  • 1/2 cup feta

Final Say:

These meatballs are delicious as is…but if you’re looking for a complete meal, serve them with a fresh, green salad or with a side of rice. Or BOTH! Remember earlier when I mentioned how DIPPING these meatballs is a winner in our house? Store-bought tzatziki is the way to go. Maybe one day I’ll make my own but for now…store bought is best. *(Sorry, Ina)
