FAIR WARNING, MY FRIENDS. You’re going to see a side of me you might not have seen before. It’s the “I’m-so-obsessed-with-cheese-that-it’s-almost-ridiculous” side but here I am, ready to bare my cheese-lovin’ soul to you. CONFESSION: I once spent $100 on cheese, in bulk…. FOR MYSELF.

Chipotle Chicken Fajitas

Grab your best cast iron skillet (mine happens to be my enameled Le Creuset) and these fajitas will come together in no time! It’s an easy, delicious dinner that definitely makes you FEEL healthy because it’s packed full of veggies but also makes you feel like you’re cheating on a diet because it’s filling and so satisfying, you know what I mean? Get creative here, add the veggies YOU like and make sure you warm your favorite tortillas to hold all of the chipotle-y goodness. This recipe is a tried and true favorite in our house – thanks to Country Living Magazine

Ingredients:

1 lb. boneless, skinless chicken thighs -cut into strips

1 tsp. ground cumin

1 tsp. chili powder

1 tbsp. vegetable oil

1 red bell pepper, sliced

1 small onion, sliced

1 cup sliced mushrooms

3 garlic cloves, chopped

1 tbsp. chopped chipotles in adobo

1 1/2 tbsp. fresh lime juice

8 warm flour tortillas

Cilantro, for serving

Instructions:

  1. Season chicken with cuminchili powder, and salt and pepper. Heat oil in a 12-inch cast-iron skillet over medium-high heat. Add chicken and cook, stirring occasionally, until cooked through, 5 to 7 minutes. Remove to a plate; reserve skillet.
  2. Add pepper, onion, mushrooms, and garlic to skillet and cook, stirring occasionally, until soft, 4 to 6 minutes. Stir in chipotles, lime juice, and chicken. Cook stirring until warm. Season with salt and pepper.
  3. Serve chicken and vegetables with tortillas and toppings.

Final Say

Sure, there’s some slicing going on for this recipe but really, the meal comes together so quickly after the prep! I threw together an Avocado Crema to put on top (seriously….half an avocado, a 4 oz tub of plain greek yogurt and a pinch of salt and pepper is all it takes) and it really made the dish! Pile the tortillas HIGH and then alternate: bite of fajitas, sip of cocktail. Bite of fajitas, sip of cocktail.
