Broccoli Pesto Ravioli

I know what you’re thinking: BROCCOLI PESTO??? But wait….I promise you’ll like it! It’s a nice way to get some veggies in…. without thinking about getting the veggies in 🙂 Even though broccoli is the main ingredient, it’s still got that basil, garlic and lemon kick we all know and love in a traditional pesto. We decided to put this broccoli pesto on some very easy, store-bought ravioli for a quick weeknight meal – making your own pasta sounds delightful but that’s more of a weekend activity for us. Quick note: we think using just plain cheese ravioli is best here. We used Spinach and Ricotta -and while it was delicious, the broccoli pesto was a little over-powered by the ravioli. (Just our opinion) This week, I FINALLY got to try out the Aperol Spritz and let me just tell you – it was EVERYTHING I wanted it to be. It was light, it was fizzy, it was refreshing….I could have had 10 of them! And maybe next time, I will.

Ingredients List:

  • 1 heaping cup very small broccoli floret pieces
  • ½ cup fresh basil or parsley
  • ⅓ cup extra-virgin olive oil
  • ¼ cup grated Parmesan cheese or 1 tablespoon nutritional yeast
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 garlic cloves
  • ½ teaspoon sea salt
  • Freshly ground black pepper
  • 1/4 cup pine nuts

Instructions:

  • Place broccoli in a microwave safe bowl and pour 1/2 cup water over broccoli. Microwave on high for 1 minute. Drain and pat dry.
  • Place the broccoli into a food processor with the basil, olive oil, cheese, lemon juice and zest, garlic, salt, pine nuts and several grinds of fresh pepper. Pulse until combined.
  • If desired, toss the pesto with the cooked pasta. Serve with more toasted pine nuts, red pepper flakes, and additional cheese. Season to taste and serve.

The Aperol Spritz

  • 3 oz dry prosecco
  • 2 oz aperol
  • 1 oz club soda
  • ice
  • orange for garnish
  1. In a large wine glass, add prosecco and aperol. Top with club soda. Add as much ice as you’d like and stir, gently.
  2. Garnish with orange slice, enjoy!
