Fire-Roasted Tomato, Spinach and Sausage Dip

You already have friends and family who love you. But….they’ll love you MORE if you make them this dip, I promise. Or….maybe they’ll end up hating you because they’re going to become addicted to this oooey gooey deliciousness? Make it anyway. What’s not to love – you have sausage, you have fire-roasted tomatoes, you have cheese….LOTS AND LOTS of cheese. and it’s easy. We’re talking 10-15 minutes to throw it all together, throw it in the oven, get those crostini and/or chips (or both!) ready and you’ll be in dippin’ Heaven.

The Ingredients List:

  • 1 lb sausage (I used Neese’s HOT Country Sausage)
  • 1 (14.5oz) can Fire Roasted Tomatoes
  • 4 cups spinach, roughly chopped
  • 1/2 cup onion, diced
  • 4-5 cloves of garlic
  • 1 tsp Italian Seasoning
  • 1 cup mozzarella, shredded
  • 1 (8oz) block of cream cheese
  • 1/4 cup Parmesan cheese
  • chopped chives, for garnish

Final Say:

I never thought there was such a thing as “TOO MUCH CHEESE” – but in the case of this dip, there was. And I would suggest definitely cooking -AND DRAINING – the sausage before adding it to your sauteed onions and garlic. Hey….we tweak recipes as we go, right?!! COOKING IS AN ART 😉 I personally love topping toasty crostini with a hot, hearty dip but a few people thought scoop tortilla chips were best – just throwing that out there. But seriously, take this dip to your next get together- you can’t go wrong. For those who LOVE their slow cooker, toss all of the ingredients in and set that bad boy on low and slow – perfect for tailgating, parties, watching movies alone with a whole bag of chips and/or baguette to yourself…the possibilities are endless.
