I’m trying, friends. Trying to really do well in the “eating better” portion of my life because HELLO!!! Bathing suit season is upon us once again and….damn. It’s been a rough year. Covid got the best of so many of us 😉 But truth be told, I actually FEEL better when I’m eating less processed food and maintaining a lower carb count. It’s not always the way I do things but when I can, I try. Here’s one of my new-found favorite recipes – and guess what?? My husband likes it too! The ingredients are all super flavorful, which helps this “good for you” dish taste like you’re indulging.

Ingredients

  • 1 lb lean ground beef (could also use 1lb lean ground turkey)
  • 12 ounces shredded cabbage
  • 4 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1/3 cup low sodium soy sauce
  • 1 TBSP toasted sesame oil
  • 1/2 cup green onions, chopped for garnish

Instructions

  1. In a small bowl: combine soy sauce, garlic, ginger and sesame oil. Set aside.
  2. In a large skillet, brown meat (and drain, if necessary). Add cabbage, stir to combine.
  3. When cabbage has begun to wilt but is still crunchy, add sauce and combine. Take off heat when cabbage has reached desired crunchiness (I like mine very “wilty”)
  4. Divide (3 portions) into bowls and garnish with green onions.

The Cocktail

Ginger Grapefruit Fizz (for 2)

  • 3 oz vodka (we like Tito’s)
  • 3 oz freshly squeezed grapefruit juice
  • 2 oz ginger-infused simple syrup
  • grapefruit seltzer
  • ice
  • grapefruit wheels for garnish

Add vodka, grapefruit juice and simple syrup into a shaker with ice. Shake until well combined and cold. Add to a rocks glass, filled with ice. Top with grapefruit seltzer. Garnish with grapefruit wheel. Enjoy!

Final Say

Feel like you’re actually eating the inside of the a dreamy eggroll….but without the high carb count! Now, I was also worried (the first time we made this recipe) that I was going to miss the crunchy eggroll wrapper. It’s deep-fried….my favorite part! But the crunchiness of the cabbage really does fill that mouthfeel void, it’s weird. But true. Something about the umami of the sesame oil (umami…..that special somethin’ somethin’ that makes you want to keep eating and eating) that makes this dish really filling and satisfying. Speaking of Umami – have you checked out Waffles & Mochi on Netflix yet??? If not, they’re 30 minute episodes and you’re guaranteed to learn so much! Plus…it’s made for kids so it’s all on a level I can understand and appreciate these days 🙂 The cocktail is very refreshing – and if you don’t mind a cocktail that has little to no sweetness, you could skip the ginger simple syrup and just have a bubbly greyhound for a lighter serving!

Grab your best cast iron skillet (mine happens to be my enameled Le Creuset) and these fajitas will come together in no time! It’s an easy, delicious dinner that definitely makes you FEEL healthy because it’s packed full of veggies but also makes you feel like you’re cheating on a diet because it’s filling and so satisfying, you know what I mean? Get creative here, add the veggies YOU like and make sure you warm your favorite tortillas to hold all of the chipotle-y goodness. This recipe is a tried and true favorite in our house – thanks to Country Living Magazine

Ingredients:

1 lb. boneless, skinless chicken thighs -cut into strips

1 tsp. ground cumin

1 tsp. chili powder

1 tbsp. vegetable oil

1 red bell pepper, sliced

1 small onion, sliced

1 cup sliced mushrooms

3 garlic cloves, chopped

1 tbsp. chopped chipotles in adobo

1 1/2 tbsp. fresh lime juice

8 warm flour tortillas

Cilantro, for serving

Instructions:

  1. Season chicken with cuminchili powder, and salt and pepper. Heat oil in a 12-inch cast-iron skillet over medium-high heat. Add chicken and cook, stirring occasionally, until cooked through, 5 to 7 minutes. Remove to a plate; reserve skillet.
  2. Add pepper, onion, mushrooms, and garlic to skillet and cook, stirring occasionally, until soft, 4 to 6 minutes. Stir in chipotles, lime juice, and chicken. Cook stirring until warm. Season with salt and pepper.
  3. Serve chicken and vegetables with tortillas and toppings.

Final Say

Sure, there’s some slicing going on for this recipe but really, the meal comes together so quickly after the prep! I threw together an Avocado Crema to put on top (seriously….half an avocado, a 4 oz tub of plain greek yogurt and a pinch of salt and pepper is all it takes) and it really made the dish! Pile the tortillas HIGH and then alternate: bite of fajitas, sip of cocktail. Bite of fajitas, sip of cocktail.

Valentine’s Day Tiramisu Mousse with A “Love Potion” Bubbly Cocktail

Valentine’s Day is THIS weekend, people! I repeat, THIS WEEKEND. Truth be told, it’s now all about our kids- which is super cute. (I’m their MOM, I can say it’s cute 😉 ) They get really excited about writing out their little Valentine’s for their friends and classmates, dressing up and of course….the CHOCOLATE! If you’re eager to celebrate and are cooking at home this year- you might still be looking for the perfect cocktail and the easiest, most delicious dessert, don’t worry…. I’ve got you. It really doesn’t get any easier than these two. Trust me. I made them both in under 30 minutes and they’re festive! WINNING!

Ingredients

This recipe adapted from: crazyforcrust.com

  • 2 oz espresso (or brewed coffee)
  • 1 cup whipped cream -I used lite coolwhip (8oz)
  • 1 cup powdered sugar 
  • 8 ounces mascarpone cheese *note* cream cheese works great too!
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsweetened cocoa powder
  • 1 ounce semi-sweet baking chocolate
  • mint leaves for garnish

INSTRUCTIONS

  • Brew espresso/coffee: Let cool for 5 minutes.
  • Mix powdered sugar and mascarpone/cream cheese with a hand mixer until smooth. Mix in vanilla extract and espresso/coffee.
  • Fold whipped cream into coffee mixture gently. Place the tiramisu in a gallon size Ziploc bag -or pastry bag- that is fitted with a large round or 1M tip.
  • Pipe a small amount on the bottom of each of 4 serving glasses (my glasses were 6 ounce size). Top the layer with a dusting of cocoa powder. Continue layering the tiramisu and cocoa powder. Once you get to the top layer, grate the 1 ounce of semi-sweet baking chocolate over the tops of the serving dishes.
  • Chill, covered with plastic wrap, in the fridge until ready to serve.

“Love Potion” – recipe adapted from Lark & Linen

Blackberry Simple Syrup:

  • 1/3 cup blackberries -I used frozen berries
  • 1/3 cup water
  • 1/3 cup sugar

Other ingredients:

INSTRUCTIONS

  1. 1. In a small saucepan, bring the blackberries, water and sugar to a LOW boil. Let simmer for 10 minutes. Strain blackberries and let syrup cool.
  2. Add 1 tsp. of syrup to the bottom of each glass. Top with bubbly and add in a sprig of mint (or thyme) and 2 blackberries. Cheers!

Final Say

These little Valentine’s Day treats will bring a smile to e’ryone’s faces, I promise! I think the only thing I’d change about the Tiramisu Mousse would be to make my OWN whipped cream next time. Reason being, the coolwhip – while lighter in calories (since I used the “LITE” version) just didn’t hold up as long as I wanted it to. It kind of became a melted mess by the time I finished piping the last of the mousse into the dessert cups. BUT IT WAS STILL DELICIOUS. (also, Producer Ben said the lite coolwhip left a little bit of an oily film in his mouth…you know, as coolwhip is wont to do. ) So, yes – the extra work of mixing heavy whipping cream with real sugar is worth it here! If you DO make your own whipped cream, be sure to taste the mousse for sweetness. You might find you need to add another 1/2 cup of powdered sugar. Wanna make this a BOOZY dessert? Add some rum into the mousse while mixing (amount up to you!!) and you could also add lady finger biscuits in the layering process to make it more traditional tiramisu – instead of tiramisu mousse!
